Hey LCB,
This is the recipe to the most incredible twist on regular pumpkin pie. It takes a little doing, but boy is it worth it!
PUMPKIN-CREAM CHEESE PIE
INGREDIENTS
Pecan Shortbread Cookie Crust
1 ½ cups lightly packed crushed shortbread cookies with pecans (16 cookies)
3 tablespoons all-purpose flour
3 tablespoons butter or margarine, melted
Filling
1 cup sugar
3 tablespoons all-purpose flour
1 package (8 oz) cream cheese, softened
1 package (3 oz) cream cheese, softened
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
¼ teaspoon ground cloves
3 eggs
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 tablespoon milk
INSTRUCTIONS
Heat oven to 375°F. In medium bowl, mix all crust ingredients until crumbly. Press firmly on bottom and side of ungreased 9-inch glass pie plate. Bake about 12 minutes or until light golden brown.
In large bowl, beat sugar, 3 tablespoons flour and both packages of cream cheese with electric mixer on low speed until smooth; reserve 1/2 cup. Add all remaining filling ingredients except milk to cream cheese mixture. Beat on medium speed, scraping bowl constantly, until smooth. Pour into crust.
In small bowl, mix reserved 1/2 cup cream cheese mixture and the milk. Spoon over pumpkin mixture. Cut through cream cheese and pumpkin mixtures with knife in S-shaped curves in one continuous motion. Turn pie plate one-fourth turn and repeat. Cover edge of crust with 2- to 3-inch strip of foil to prevent excessive browning.
Bake 35 to 40 minutes or until knife inserted in center comes out clean, removing foil for last 15 minutes of baking. Cool 30 minutes. Cover loosely and refrigerate at least 4 hours before serving. Store in refrigerator
Y'all Enjoy! -

What are you the most thankful for?
On Wednesday the day before Thanksgiving my son (he's 26) will have 60 days sobriety. Even though he has a severe mental illness..schizophrenia..and takes medication, I have never seen him so strong in his sobriety. I think this time it will take. A true miracle and blessing O:-)
Memorable Casino wins you’re thankful for.
When I first moved to the Palm Springs area about 10 years ago, my mom and I didnt go to the Native American casinos at all. We were here only like 6 months there and on New Years Eve we thought we'd go and make a night of it. We first went to the Trump 29 and omg I won $400. My mom was tired so we went home but I told my mom, "I sure do feel lucky tonight". I think I'll go to the Spa Casino in Downtown Palm Springs. She said you go ahead I'm going to bed. I took $200 of my winnings and went. I played for a few hours going up and down ...up and down. Finally I too was tired and ready to go to bed and with $100 left went to the high roller room. It was an old machine with plums and such. I put my $100 bill in and it was $8 a hit Well...on my last hit I hit the second jackpot with 8 out of 9 plums for a total of just a few dollars under $10,000. OMG OMG...the machine started dinging and ringing. I just sat there with my mouth open. What a great feeling!! 9 out of 9 plums would have been $26,000. But i was still Happy Happy Happy. That money helped me buy my house
Favorite food/dessert or drink recipes.
Ok this is too funny...our family favorite standard Thanksgiving side dish is green beans almondine or at least what I thought was green beans almondine. I wanted to share the special way we make them so i googled it cause i only know the measurements by sight Omg...I searched high and low and could not find the recipe for the way we make them. So who knows where my mom got the recipe since I remember eating them as a kid. First you toast the slivered almonds in butter, then add powdered sugar and a little vinegar and a little water to make a sweet and sour type glaze. Next add frozen french style green beans...slowly cook till the beans are ready. I have brought these to many a Thanksgiving dinner and everyone loves them.
What is your favorite food on the dinner table?
Stuffing...there is nothing greater than a perfect stuffing with just the right ingredients and seasoning. Our family standard: Sausage stuffing with vegetables. First start homemade broth. Boil all the innards and neck you find inside the turkey with your favorite poultry seasonings. Cook one lb. of sausage (like the kind that comes in a tube or from your butcher) til crumbly...cooked but not browned. Saute small diced carrots, celery, mushrooms, green onions, garlic, and the meat (dice it first) from the homemade broth in the sausage drippings add a little butter if necessary. In a regular toaster toast two loafs of a good brand of Oat Nut Bread. Tear into cube size pieces. Blend everything altogether In a big bowl with a tbsp of poultry seasoning, salt and pepper to taste. Mush it altogether with the broth you made to the consistency you like. Some people like their dressing wetter or drier than others. Stuff your turkey with it and if you have some left cook it in a pan. Yum Yum....its the best.
Sorry i dont have the measurements on the recipes. I have always cooked from scratch and eyeball everything and taste to my liking. Havent had a complaint yet -

What are you the most thankful for?
I am most thankful for having eighth graders who do now allow any other students to make fun of or bully an autistic student and a down syndrome student that participates in my regular classroom. Kids can be cruel because sometimes they don't understand different people.
My autistic students talks very loudly and has outbursts. Many times, other students make fun of him. They also try to make the down syndrome student do in appropriate things. My class read "Flowers for Algernon", which is a story about a retarded man named Charlie who gets an operation and becomes smart. Eventually he looses his intelligence. He sees how people used to use him as the butt of their jokes. When my students see other kids doing the above behaviors to my students, they automatically go and protect them.
My students make these kids feel apart our family. I have never had a group of students like this in the sixteen years i have been teaching. I am so thankful for their empathy, caring, and their good hearts.
